Perfect to kick things off. If you\u2019re in\u00a0<strong>BiBo Tarifa<\/strong>, go for the bipolar tuna tartare with white soy. And while you\u2019re at it, don\u2019t miss the ceviche\u2014zesty, delicate, and more refreshing than a fan pointed straight at your face.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At&nbsp;<strong>Le\u00f1a<\/strong>, even in summer, you eat with gusto. The grilled M\u00e1laga avocado comes with young coriander pesto and a vegetable salpic\u00f3n with feta cheese. There\u2019s also a lovely tomato salad with green olive juice and mint. The Coquelet chicken rice is a classic, and the lobster one is simply unmissable. No need to complicate things. A good stock, perfect doneness and real seafood. That\u2019s how summer should be enjoyed.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Cold soups with personality<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">At&nbsp;<strong>Tragabuches<\/strong>, gazpacho isn\u2019t red. It\u2019s pink. The cherry version steals the show\u2014cool, tangy, sweet, and finished with a drizzle of good olive oil. You can also go for the ever-reliable&nbsp;<strong>salmorejo<\/strong>.
