There are no predefined rules. Only a sensory progression designed down to the smallest detail by Massimiliano Delle Vedove, chef of Smoked Room, taking you from absolute subtlety to the deepest intensity.

A Menu Where Smoke Sets the Rules and Spain’s Best Sommelier Works His Magic

If you know the Smoked Room universe, you know we do not do things halfway.

The journey will begin by gently caressing the palate with the precise freshness of Motril prawns with brown butter and yuzu kosho, before raising the temperature step by step.

You will come face to face with iconic creations of surgical precision:

  • Smoked eel nitro tomato with roasted pepper gel and Málaga-style ajo blanco.
  • No sakemushi langoustine with grilled mayonnaise.
  • The commanding force of grilled Kagoshima A5 Wagyu, accompanied by 34-year-aged soy sauce and fresh wasabi.

Even the sweet finale refuses to leave the fire behind, with chocolate, miso and smoked notes that extend the experience until the very last second.

But a menu of this calibre would be incomplete without a conductor to match. That is why the pairing will be led by Luis Baselga, named Spain’s Best Sommelier by the MICHELIN Guide 2026.
