One parcel, one wine, one ingredient. That is why, each year, Maison Krug pays tribute to one ingredient and the pleasures it reveals when paired with a glass of Krug Grande Cuvée or Krug Rosé. For 2023, this Single Ingredient is the lemon, and to celebrate it has teamed up with chef Dani García’s new omakase bar concept, Kemuri, to offer an exclusive tasting menu with the best of the highest level Japanese cuisine and a high level liquid proposal. In this way, the Marbella chef has been challenged to create a proposal with lemon as the protagonist, a fruit chosen for its acidic character and electric energy, which brings tension and balance to the pairing of the two new editions Krug Grande Cuvée 171ème and Krug Rosé 27ème. 

Conceived as a tribute to one of the most fascinating cuisines in the world, Kemuri has recently reopened its doors with a proposal that maintains its original essence, but elevates it to the highest exponent. It is a place to savour millenary Japan without looking at the clock in search of Umami; the place of the izakaya, where you are invited to stay, and where you will find traditional Japanese cuisine combined with Mediterranean flavours. 

Using seasonal, high-quality products, the space offers a unique experience centred on the omakase or trust in the chef. Thus, in the main space there is a large bar, where the itamae or head chef forms part of the diner’s experience, who will place himself in the hands of the chef in order to be able to taste his proposal. A beautiful Japanese tradition that Dani García has wanted to maintain in Kemuri for the surprise and enjoyment for those who decide to trust him.

With a capacity for up to 14 people, it is the first restaurant concept that Dani García has dedicated to Japanese cuisine, paying homage to friends and colleagues such as chef Nobu Matsuhisa. In short, an exclusive space designed to offer a unique experience in an incomparable setting.

With the same majesty with which the strokes of the Asian brush are captured on paper in Shodō, also known as the ancient art of Japanese calligraphy, Kemuri arrived in Marbella last year thanks to Dani García to offer the purity of the gastronomy of the land of the rising sun in a unique setting.

In addition, the sake menu stands out, consisting of a meticulous selection of approximately 40 different sakes selected by the Sake Sommelier, Dominik Ponomarew. A journey through the different Japanese styles and prefectures with bottles as unique as Niizawa’s SANKYO SUPER 7 2021, which happens to be one of the most outstanding in Andalusia.

BiBo Madrid

We started 2022 with Dani Garcia’s debut in New York with Casa Dani and Pollo Verde, which are two ”Typical Spanish” in the middle of the Big Apple.

We begin the summer with the inauguration of Alelí in Marbella. A trip to Italy through the Italian cuisine of Dani García.

We continue with Kemuri, the Asian cuisine of Dani Garcia reached your palates to stay at the Puente Romano Hotel

The most famous brioche in the history of the Brioches, celebrates its first anniversary with Bibo, in Madrid and in Shoreditch (London).

We end the year with Tragabuches Marbella, to soak up the gastronomy of our Andalusian land.

Tragabuches Madrid

Picasso once said, “Everything that can be imagined is real”. Under this same premise, the Dani García Group brings to Madrid its first cocktail bar, a multi-sensory space inspired by art galleries and antique collections, and which is hidden in the bowels of the BiBo restaurant of the capital. 

El Coleccionista” is a place where art comes to life through its exceptional liquid offers, in a space where sophistication and casualness coexist. In it, past, present, and future come together to create a unique experience that allows you to enjoy the efficiency of time, all with a purely artistic approach that offers the possibility not only of drinking authentic works of art but also of acquiring collectible items. 

Its proposal is based on a gastronomic cocktail where technology and research are in harmony with creativity and imagination. In this way, up to a hundred techniques are used from the elite of the gastronomic avant-garde worldwide, applied in the search of flavour.

El Coleccionista Madrid

The liquid menu is the undisputed protagonist of “El Coleccionista.” Consisting of twelve alcohol cocktails, made with techniques ranging from redistillations to fermentations, through fat-washes, centrifuges, ultrasounds, dealcoholisation, illusions, or textures. Highlights include drinks such as “Oil on canvas”, in which both the bartender and the customer will paint this work of drinking art together choosing from a special selection of ingredients; or “Ymanyá”, inspired by the goddess of the sailors and sea crossings. Made from an ultrasound extraction of white rum in nettles from the Mediterranean Sea with an extraction of generous hibiscus flower from the Red Sea, spices from the Black Sea and balanced with a touch of smoked dates from the Persian Sea. Finally, it incorporates a tuile of pistachios from the Arabian Sea, a fake coffee caviar, garum from the Caspian Sea and a bergamot gel from the Adriatic Sea.

On the other hand, there are three limited edition cocktails, which complement the proposal of the space as if it were a private collection. They will be available until the end of stock and incorporate distillates and vintage products that will delight a lucky few.

Like any good collection room, this space also has a unique and unrepeatable repertoire only available for ten people worldwide. With the name “The club of 10”, a cocktail will be created from irretrievable bottles that will be auctioned; once the bid is closed, the customer will define the price of the ten only units available, and his initials will be written on the Collector’s letter with the bid date and the name of the cocktail. Another aspect that makes the difference is that the whole cocktail menu is also available in its non-alcoholic version, maintaining the same organoleptic properties.

El Coleccionista Madrid

The culinary proposal has a complementary role in “El Coleccionista” formed by a small selection that includes some of the most iconic dishes and snacks of chef Dani Garcia. Among them, its emblematic brioches, starters such as grilled edamame and a couple of sweet options. In parallel, there is also room for coffee, and during the first hour of opening, the space will feature two fun versions of coffee accompanied by some special mignardises.

With a capacity of up to twenty-eight diners, “El Coleccionista” thus becomes the new space of the Malaga chef in the capital, after its opening last September of the restaurant Tragabuches in Marbella.

The December holiday returns, a few days of rest in the middle of the routine, and with it the pre-Christmas plans in family or with friends, Christmas lights, trips, lunch, and dinner… We bring you our list of favourite plans for these days in Spain or for more travel lovers.

The Spanish have again chosen the big cities of Europe for a pre-Christmas getaway, Madrid, Malaga, London, Budapest, Dublin… are some of the best bets for this long weekend for the Christmas atmosphere that inspire, in addition to the lighting itself for the occasion.

Alelí Marbella

Let us start with the capital, Madrid, and the wide variety of plans it offers:

Visit the market of the Plaza Mayor, Ice skating (Plaza de España, in Matadero, in the Crystal Gallery of the Palacio de Cibeles or in the Plaza de Colón) but… ¡ Huston, we have a problem! We continue in Malaga with its characteristic lighting of Calle Larios; and since we are on the Costa del Sol, we cannot leave without visiting Marbella, with its Christmas lighting and its historic centre, Christmas markets… What better opportunity to enjoy Christmas and at the same time as the Andalusian cuisine, than in our restaurant Tragabuches, we also have options if you fancy meat, firewood, or fish? On the other hand, and for the more travel lovers London is another great bet for this long weekend, with its characteristic flea markets and its streets illuminated for the occasion. In London you cannot miss Winter Wonderland, a giant Christmas fair in Hyde Park, with attractions, ice skating rink, Christmas markets… Are you nostalgic or tired of so many fish & chips? Do not worry be happy, in BiBo Londres we are waiting for you to teleport to Spain.

Obviously, we cannot forget to support ”La Roja” in Qatar. For all those who have travelled to the Qatari capital to enjoy this world cup, we have the solution to make them feel at home, do you fancy meat? For this reason, the past seven years the historic Maison, through its Krug Single Ingredient programme, has paid tribute to a single humble and universal ingredient each year. The goal is to invite Krug Embassy chefs from around the world to explore the limitless potential of this unique ingredient in an inspiring culinary adventure. In 2022 the honoured ingredient is rice.

A global symbol of livelihood and vitality, rice is a versatile and charismatic cereal, as well as the backbone of some of the most iconic recipes in many of the world’s cuisines. For this reason and for its similarity with grapes, which shares that humble, generous, universal character and at the same time singular and very versatile, Krug has chosen this ingredient.

On this occasion the Maison challenges Dani Garcia, one of the best chefs in the world, and with whom he shares that passion to transcend the borders of the established, to unleash the creative potential of rice in his izakaya. Thus, Dani Garcia will give life to exquisite recipes specially designed for the occasion, inspired by this unique ingredient, and will be served together with the Champagnes Krug Grande Cuvée and Krug Rosé. 

The space chosen for this could not be any other than Kemuri, the new Japanese restaurant that the Marbella chef recently opened in his hometown. Thus, during the days 14, 15 and 16 of December there will be an unpublished edition in which you will be offered an exclusive pairing menu where the same common link will be: rice. 

Kemuri is a tribute from the Marbella chef to one of the most fascinating cuisines in the world, able to transport the diner to the heart of Kyoto, symbol of Japanese tradition and craftsmanship. Its wide and varied menu remains true to its essence, including an authentic proposal with dishes from the most classic Japanese cuisine reinterpreted, all in combination with a unique and disruptive atmosphere. Summarizing, an exclusive space designed to offer a unique experience in a unique environment that together with Krug can only be pure umami.

The Malaga chef welcomes the autumn season with new concepts and openings in Marbella.

After an intense summer with the openings of Kemuri, where the chef pays tribute to Japan, and the Italian restaurant Alelí, Dani returns to its origins with Tragabuches, a pure Andalusian restaurant.

With these new concepts, Dani García returns to the routine of exploring other international cuisines, as he did a few months ago with Babette, being a tribute to French cuisine in Marbella. With Tragabuches the Andalusian style is recovered and that traditional cuisine with which the chef made his way through the industry, and where he was awarded his first Michelin star.

ALELÍ

Since July, italian restaurant Alelí has been Dani García’s new bet on Italian cuisine. A restaurant inspired by the most authentic, beautiful and decadent Italy, and with references such as “La dolce Vita” by Federico Fellini or “La Gran Belleza” by Paolo Sorrentino, the restaurant offers an experience that focuses on the quality of raw materials and technique. It is a classic osteria that offers a gastronomic trip to the diner through the regions of Piedmont, Lombardy, Lazio, Campania or Sicily, and that has its culmination in the courtyard, a terrace full of colour and vegetation, which is a window to the Amalfi coast.

KEMURI

On the other side of this iconic courtyard is Kemuri, a journey to more traditional Japanese cuisine, inspired by sushi bars and the age-old gastronomic culture of the city of Kyoto with the seal of Dani Garcia. With capacity for a maximum of 45 diners, it is an exclusive place that brings the cuisine of the Japanese country all day and at night transforms into Kurai, a cocktail bar where you can sample a varied menu with exclusive cocktails inspired on the history of the Five National Treasures of Japan.

TRAGABUCHES

With Tragabuches, on the other hand, Dani García recovers one of the first restaurants with which he managed to consolidate himself in the national gastronomic panorama. Originating in Ronda in 1998, it now arrives in Marbella with a proposal of traditional cuisine aimed at all audiences. Thus, Tragabuches is Andalusia in its purest state, a place where you can breathe its culture in every corner and where the local product and proximity will be the main axis. Your menu will not be missing spoon dishes and lifelong recipes, but adapted to the present times.

Covering new types of cuisine, such as Italian and Japanese, located in Puente Romano and finally the traditional Andalusian with Tragabuches.

Kemuri is a tribute by the chef from Marbella to one of the most fascinating cuisines in the world, with which he will be able to transport the diner to the heart of Kyoto, a symbol of Japanese tradition and craftsmanship. His extensive and varied menu remains true to its essence, including an authentic proposal with dishes from the most classic Japanese cuisine, such as wagyu ramen, all in combination with a unique and disruptive atmosphere.

KURAI NIGHTS

Night comes to Kemuri and Dani García’s Japanese tavern becomes a new concept.

When it reaches 00:00, the katanas are drawn, a change to the sound of music from the Omakase bar by the DJ, together with a Japanese show, turns your dining experience into a clandestine cocktail bar. Undoubtedly the place to spend your Marbella evenings.

Kurai, which means “dark” in Japanese, welcomes 45 people who will enjoy Dani García’s first concept dedicated to Japan.

TENKA GOKEN

As the story of the “Five National Treasures of Japan” goes, Kurai Nights begins with a hammer to the ice, and the Tenka Goken arise because that is when the blacksmith begins his work.

A cocktail bar with a signature menu signed by chef Dani García and directed by Manu Valenciano, the Group’s Bar Manager. Inspired by Japan and its traditions, bringing all the senses to Japanese culture through good drinking.

They will make you feel as if you were in a real speakeasy cocktail bar.
