We missed you! In March 2023, BiBo returns to its origins in Puente Romano after a year without brioche on the Costa del Sol.

Dani García means BiBo, which was his first ”pret a porter” restaurant. In 2019, he took the well-considered decision, amidst the anger of his loved ones, to close the three Michelin-starred Dani García Restaurant, a year after achieving his third Michelin star.  

Our chef wanted to make his cuisine more accessible, for all audiences, he was tired of haute cuisine, and his aim was to grow in the world, something that four years later he could prove he had achieved.

Let’s talk a little about BiBo’s journey over the years.

BIBO Madrid

From Marbella to the world

In April 2014 it was inaugurated in Marbella. After five years, in 2019, BiBo Madrid was born, located on the border between the Chamberí and the Salamanca neighborhood, close to the American Embassy. Everything in the premises refers to the many places Dani García has visited, dominated by a hot air balloon that acts as an umbrella for the 800-metre bar.

In 2019 he travelled to Tarifa and brought out his surfing side with BiBo Beach House. The restaurant is built on a large wooden platform and has a covered and glazed area to placate the effects of the east wind. The exterior decoration gives an ecological and seafaring personality with the remains of boat sails. The central part of the room is dominated by a giant tuna hanging from the ceiling. It also has a bar and DJ booth. In addition, Dani García has created in Valdevaqueros BiBo Watersport, a water sports school.

In 2020, he took a giant step forward and took a plane to travel abroad, specifically to Doha, located in the luxury hotel St. Regis Doha, with a shorter format and a concept adapted to local customers, with the use of spices, almonds, honey and saffron, but maintaining its essence with the most classic dishes of the restaurant. In addition, the restaurant in the Qatari city is recreated through the ambience and decoration.

His last destination outside our borders was in 2021, when he landed in London, specifically at the Mondrian Shoreditch London Hotel, with his interpretation of Spanish flavor’s renewed, but maintaining the essence of a cosmopolitan restaurant. The chef’s aim was to bring together dishes that his gastronomic memory has accumulated during his trips in Spain and abroad.

From 2014 until today, BiBo has been followed by new brands with different concepts. In 2017 Lobito de Mar was born in Marbella, a restaurant that revolves around seafood and that two years later travelled to Madrid; in 2020, in the middle of the pandemic, Leña Marbella opened as a ”steak house”, which a year later was welcomed by the people of Madrid

Last year, 2022, was a year of openings for Dani García in Marbella starting with Alelí, which opened in the city as the chef’s first Italian concept, followed by Kemuri, and its Japanese cuisine, and ending the year with Tragabuches in September, which brought back the chef’s roots with its Andalusian concept and KM.0 cuisine.

In BiBo’s menu you can find the Russian salad with Extra Virgin Olive Oil and tuna belly, and naturally the famous oxtail Brioche as well as its ”Oyster & Raw Bar” section where it offers a variety of raw dishes, tatakis, tartars and oysters.

It is that, according to the story, tiramisu owns its origin at the end of XVII century as an offering to the Great Duque of Toscana; on the other side, there is someone who date Tiramisu’s appearance in XIX century, even though it is said that its creation was in Venecia.

We continue with Kemuri, the Asian cuisine of Dani Garcia reached your palates to stay at the Puente Romano Hotel

The most famous brioche in the history of the Brioches, celebrates its first anniversary with Bibo, in Madrid and in Shoreditch (London).

We end the year with Tragabuches Marbella, to soak up the gastronomy of our Andalusian land.

Picasso once said, “Everything that can be imagined is real”. Under this same premise, the Dani García Group brings to Madrid its first cocktail bar, a multi-sensory space inspired by art galleries and antique collections, and which is hidden in the bowels of the BiBo restaurant of the capital. 

El Coleccionista” is a place where art comes to life through its exceptional liquid offers, in a space where sophistication and casualness coexist. In it, past, present, and future come together to create a unique experience that allows you to enjoy the efficiency of time, all with a purely artistic approach that offers the possibility not only of drinking authentic works of art but also of acquiring collectible items. 

Its proposal is based on a gastronomic cocktail where technology and research are in harmony with creativity and imagination. In this way, up to a hundred techniques are used from the elite of the gastronomic avant-garde worldwide, applied in the search of flavour.

El Coleccionista Madrid

The liquid menu is the undisputed protagonist of “El Coleccionista.” Consisting of twelve alcohol cocktails, made with techniques ranging from redistillations to fermentations, through fat-washes, centrifuges, ultrasounds, dealcoholisation, illusions, or textures. Highlights include drinks such as “Oil on canvas”, in which both the bartender and the customer will paint this work of drinking art together choosing from a special selection of ingredients; or “Ymanyá”, inspired by the goddess of the sailors and sea crossings. Made from an ultrasound extraction of white rum in nettles from the Mediterranean Sea with an extraction of generous hibiscus flower from the Red Sea, spices from the Black Sea and balanced with a touch of smoked dates from the Persian Sea. Finally, it incorporates a tuile of pistachios from the Arabian Sea, a fake coffee caviar, garum from the Caspian Sea and a bergamot gel from the Adriatic Sea.

On the other hand, there are three limited edition cocktails, which complement the proposal of the space as if it were a private collection. They will be available until the end of stock and incorporate distillates and vintage products that will delight a lucky few.

Like any good collection room, this space also has a unique and unrepeatable repertoire only available for ten people worldwide. With the name “The club of 10”, a cocktail will be created from irretrievable bottles that will be auctioned; once the bid is closed, the customer will define the price of the ten only units available, and his initials will be written on the Collector’s letter with the bid date and the name of the cocktail. Another aspect that makes the difference is that the whole cocktail menu is also available in its non-alcoholic version, maintaining the same organoleptic properties.

El Coleccionista Madrid

The culinary proposal has a complementary role in “El Coleccionista” formed by a small selection that includes some of the most iconic dishes and snacks of chef Dani Garcia. Among them, its emblematic brioches, starters such as grilled edamame and a couple of sweet options. In parallel, there is also room for coffee, and during the first hour of opening, the space will feature two fun versions of coffee accompanied by some special mignardises.

With a capacity of up to twenty-eight diners, “El Coleccionista” thus becomes the new space of the Malaga chef in the capital, after its opening last September of the restaurant Tragabuches in Marbella.

The December holiday returns, a few days of rest in the middle of the routine, and with it the pre-Christmas plans in family or with friends, Christmas lights, trips, lunch, and dinner… We bring you our list of favourite plans for these days in Spain or for more travel lovers.

The Spanish have again chosen the big cities of Europe for a pre-Christmas getaway, Madrid, Malaga, London, Budapest, Dublin… are some of the best bets for this long weekend for the Christmas atmosphere that inspire, in addition to the lighting itself for the occasion.

On the other hand, and for the more travel lovers London is another great bet for this long weekend, with its characteristic flea markets and its streets illuminated for the occasion. In London you cannot miss Winter Wonderland, a giant Christmas fair in Hyde Park, with attractions, ice skating rink, Christmas markets… Are you nostalgic or tired of so many fish & chips? Do not worry be happy, in BiBo Londres we are waiting for you to teleport to Spain.

Obviously, we cannot forget to support ”La Roja” in Qatar. For all those who have travelled to the Qatari capital to enjoy this world cup, we have the solution to make them feel at home, do you fancy meat? The Japanese restaurant of Marbella chef will be transformed to create a unique experience by Krug, offering an exclusive menu with pairing in its Omakase bar.

Thus, Dani Garcia will give life to exquisite recipes specially designed for the occasion, inspired by this unique ingredient, and will be served together with the Champagnes Krug Grande Cuvée and Krug Rosé. 

The space chosen for this could not be any other than Kemuri, the new Japanese restaurant that the Marbella chef recently opened in his hometown. Thus, during the days 14, 15 and 16 of December there will be an unpublished edition in which you will be offered an exclusive pairing menu where the same common link will be: rice. 

Kemuri is a tribute from the Marbella chef to one of the most fascinating cuisines in the world, able to transport the diner to the heart of Kyoto, symbol of Japanese tradition and craftsmanship. Its wide and varied menu remains true to its essence, including an authentic proposal with dishes from the most classic Japanese cuisine reinterpreted, all in combination with a unique and disruptive atmosphere. The most international menu

In addition to our brunch, remember that you can enjoy our menu from Monday to Sunday during lunch and dinner. Different sections divide a special and traveling menu with dishes for all tastes.

A new restaurant arrives on the shores of Marbella. In this case, it is an old acquaintance. Dani García returns to his origins with Tragabuches, which opened its doors on Saturday 24 September.

It was in 1998 when Tragabuches opened in Ronda, a restaurant in which Dani García would be at the head of the kitchen. A Km. 0 restaurant, avant-garde and multi-awarded, where the product and the process were the main protagonists in this concept. Today, 24 years later, Tragabuches opens its doors in the chef’s hometown, Marbella.

Tragabuches is described as pure Andalusian cuisine, culture and product. A refuge to enjoy the flavours of Andalusia with the family. This philosophy is identified in the space, being calm and without artifice. This space will be well differentiated in two, a lounge with a menu which will include a section dedicated to Andalusian Iberian ham, Andalusian cheeses, vegetables, cured meats, eggs… On the other hand we find the bar, which will have tapas, and other dishes that will be exclusive there.

BREAKFAST

For the first time in the history of the Dani García Group, it will offer breakfasts. Therefore, Tragabuches is a “Non-Stop” kitchen model, starting from 9:00 with these breakfasts, until closing (00:00), passing through the bar area and arriving until the opening of the dining room. In these breakfasts, you will be able to enjoy the breakfasts that all Andalusians have come to enjoy.

CULINARY AND LIQUID PROPOSAL

At Tragabuches we serve dishes that we have eaten all our lives. Each product will have a name and surname, as it will come from a specific crop and a special farmer. Vegetables, eggs, rice, fish…

Tragabuches is to savour Andalusia from all the “costaos” along with a liquid proposal with a historical journey through well-known Spanish wines such as Marqués de Murrietas del Castillo Ygay1925 or CVNE Imperial gran reserva 1928, also offering some more recent ones such as Alión 1991.
